Purchased a duck salami that absolutely blew my mind. The owner clearly has a vested interest in supporting local farms, with an emphasis on quality meat that is processed on site. Owner was very kind and friendly, he walked us through all of his products as well as the places he sources his meat from. Highly recommend

It’s great that Canteen Meats is now ope three days a week - Wednesday, Friday and Saturday.

My first love was mortadella. Still go through a couple of packages a week. Until I tasted Canteen Meats’ version mortadella was on the bottom of my charcuterie list.

Then a couple of weeks ago I tried the duck salami with pistachios. I chose it because it meets my requirement of “something that sounds awful. I gotta try it.” mantra. It’s filled with deep flavor and I often pair it with some Italian Capretta (a washed rind goat cheese) that i get at Petaluma Market.

Then yesterday I tried the Lomo. I was blown away. It too had great flavor when it my tongue. The cool thing for me was the subtle hint of heat that arose in the back of my throat that came from the Hot Smoke Paprika ingredient.

I can’t wait to try open the batch of the Culotta, salt cured pork ham. The ingredients are just California pork and sea salt, aged 15 months. I This batch has a bit more lean. This one follows something my culinary school daughter-in-law’s teacher’s aphorism “fat is flavor, butter is love. And this is thinly sliced to show off the fat. I really like it with some Epi bread from Della Fattoria

I told the owner, John, “I hope your back hurts just a bit from all the bows. Canteen Meats seems to be adding new flavor options at an increasing rate.”

Beautiful store, friendly owners, and truly outstanding cured meats. All the meat is of the absolute best quality and it really shows in the end product! Must try for any cured meat lovers!
