There is really no way to accurately describe how special this restaurant is. It is an experience for all of the senses. The atmosphere is so intimate and a little quirky but I immediately fell in love with it. The food is so whimsical and inventive and pushes boundaries. It's absolutely delicious and beautiful. The wine pairings were spot on. The husband and wife team have really created something unlike anything else I've experienced. It's a true labor of love that is evident in all of the details if you pay attention.

My wife and I celebrated our 40th wedding anniversary at nyloS. It was an amazing culinary experience. We had never done a chef’s tasting before. We were not disappointed. All of the food was excellent. Jeremy and Paulina make you feel welcomed with a very friendly yet professional food service. We would not hesitate returning to nyloS on a future visit to Maui and highly recommend.

I was searching for a special place to dine on Maui Island to celebrate my girlfriend’s birthday. It wasn’t easy, but luckily I found Nylos Restaurant! Before we even arrived, while still in the Netherlands, I sent a few requests to the restaurant, and when we got there, everything I had asked for was already arranged — truly impressive!

We opted for the six-course tasting menu, which also included three small amuse-bouches. The entire meal was incredible, filled with a variety of delicious flavors that made each dish a delight. We had the option for wine pairing, but since I was driving and my girlfriend is pregnant, we had to skip that part.

The food was outstanding, but what made the experience even more memorable was the exceptional hospitality. The husband and wife team behind the restaurant truly made us feel special. The husband is the chef in the kitchen, and his wife served us with a smile, ensuring everything was perfect — it felt like a Michelin-level dining experience!

I’m unable to say enough amazing things about Nylos and the owners. From the beginning of making reservations to signing our tab, our experience was michelin. We were running late (per usual), and they were very accommodating considering the pristine delicacy they take preparing each dish for their guests. Paulina’s welcoming presence and gentleness make you feel at home while the ambiance of the restaurant makes you feel like 18th century royalty. Food is such an exchange of energy, and each bite serves a different experience for your palate. We enjoyed seeing Jeremy doing his thing in the kitchen from our cozy table. They donate so much time and care to ensure their guests experience a taste from different cultures all over the world. I haven’t eaten meat in seven years, but the temptation was strong considering their astounding display! My best friend from second grade and I brought our mothers here for Mother’s Day and witnessing their joy, the “ohhhs” and the “wows” with each dish, their eyes while Paulina genuinely conversed with them - it was priceless! Thank you, Paulina and Jeremy, for the unforgettable experience. Can’t wait to visit again!

An epicurean journey. Jeremy and Paulina are great. The hours put into the presentations are easy to see. Let me know when you do a chefs table and I’ll sign up for another trip to Maui.
All the dishes were over the top. Honorable Michelin 🌟 Stars 🌟. In the top three of all our dining experiences throughout the world. Better than Jules Verne for half the price.
Price is absolutely worth the experience and the culinary delights. Wine pairings spot on.

This was, by far, the best experience my family and I have ever had at a restaurant. Jeremy was a wonder to watch in the kitchen as he perfectly prepared each course. You could feel the sense of pride he took every step of the way. Paulina, Jeremy's wife, was attentive to each table, conversed with everyone and was simply delightful. If you want to experience a night to remember on Maui, don't pass up the opportunity to dine at the exquisite nyloS! And don't forget to bring your appetite!

Finest dining in Maui! Absolutely a delicious dinner, perfectly presented and a dinning experience that we will not forget! Loved meeting Chef Jeremy and Paulina and having them talk about our meal. They both share their passion for the food experience and ensure everything was beyond our expectations.
Intimate dining room that provided the ability to talk amongst ourselves, listen to an excellent music Playlist, and enjoy the overall evening. Not rushed at all, would highly recommend!
